Creamy Chicken and Scallops

Here’s a delicious recipe that combines scallops, cream, and chicken:

Ingredients:

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 500g sea scallops
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Prepare the Chicken:
  • Season the chicken breasts with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  1. Cook the Scallops:
  • In the same skillet, melt the butter over medium-high heat.
  • Season the scallops with salt and pepper.
  • Add the scallops to the skillet and cook until they are golden brown and cooked through, about 2-3 minutes per side. Remove from the skillet and set aside.
  1. Make the Sauce:
  • In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine.
  • Bring the mixture to a simmer and cook until it thickens slightly, about 3-4 minutes.
  • Stir in the Parmesan cheese and lemon zest. Season with salt and pepper to taste.
  1. Combine and Serve:
  • Return the chicken breasts and scallops to the skillet, spooning the sauce over them.
  • Cook for an additional 2-3 minutes until everything is heated through.
  • Garnish with fresh parsley before serving.
